Beef Barley Soup with Mushrooms (Printable)

# What You'll Need:

01 - 1 pound beef chuck roast, cut into 1/2-inch cubes
02 - 4 ounces pancetta, diced

# How-To:

01 - Heat 1 tablespoon olive oil in a large heavy-bottomed pot or Dutch oven over medium-high heat. Add pancetta and cook until browned and crispy, approximately 3-4 minutes. Remove with a slotted spoon and set aside. Season beef chuck cubes with salt and pepper. Working in batches, add beef to the pot and sear until browned on all sides, about 5-6 minutes per batch. Remove and set aside.
02 - Add remaining 1 tablespoon olive oil to the pot. Sauté onion, carrots, and celery until softened, approximately 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant. Add sliced mushrooms and cook, stirring occasionally, until mushrooms release their juices and begin to brown, about 6-8 minutes.
03 - Stir in tomato paste and cook for 1 minute. Return reserved beef and pancetta to the pot. Add pearl barley, bay leaves, thyme, rosemary, beef broth, and water. Bring to a boil over high heat.
04 - Reduce heat to low, cover the pot, and simmer for 1 hour and 30 minutes, stirring occasionally, until beef is tender and barley is fully cooked.
05 - Remove bay leaves from the pot. Taste and adjust seasoning with additional salt and pepper as needed. Ladle soup into bowls and garnish with fresh parsley if desired.
